Breakfast for Supper = Supperfast

I have the easiest, yummiest breakfast casserole recipe that I got from my brother-in-law. You just have to try it. I’m pretty sure his family eats this for…well…breakfast. But my family has this dish for supper. If you have not tried having a breakfast dish for dinner, please do!!! Especially if you have chitlins around…for whatever reason, it’s a real treat (and breakfast foods are totally cheap!).

As I’ve mentioned before, I often modify recipes that I find or that are shared with me. So feel free to modify this one to your liking.

You will need:

  • 5 eggs
  • 1/2 cup of half and half
  • bag of frozen hashbrowns
  • 4 table spoons of butter (I use Can’t Believe It’s Not Butter)
  • 2 cups cubed ham (you can use bacon or sausage or a combination)
  • 2 cups shredded cheese (I use mixed cheeses)
  • seasonings
Preheat oven to 350 degrees. Spray casserole dish (I use Pam) and place hashbrowns at the bottom. Pat down. I season my potatoes with onion powder, seasoning salt, garlic powder, and pepper. Then goes in the 4 tablespoons of butter….try to distribute evenly. Sprinkle thin layer of cheese. Sprinkle on ham evenly. In separate bowl, beat eggs and half and half (I also season this with salt and pepper). Pour over hashbrowns and ham. Top with the rest of your cheese. Bake for 30-40 minutes.
See!!! So easy! So cheap! Sooooo yummy :) Enjoy!
