Since we live in Arizona, I try my best not to turn my oven on in the summer. It’s just too stinkin’ hot! If I have to bake, then I will usually wait for the sun to do down. One problem– a lot of the dinners I make use the oven. Bummer. So I have been trying to look up crock pot recipes (this is my favorite crock pot recipes blog!) and turn some of my baked dishes into a crock pot meal.
Today I made lemon pepper chicken, red potatoes and baby carrots. Was super easy, super fast, super homemade, and I didn’t have to use my oven!
What you need:
-cubed boneless, skinless chicken breast (2 is enough for our family…figure 1 breast per person)
– 5 small red potatoes
– 2 cups baby carrots (again…depends on how many mouths you are feeding)
– lemon pepper marinade (I buy the All Seasons 30 Minute Marinade)
– 2 tablespoons butter (more if you have more veggies)
– seasonings (I use salt, onion powder, garlic powder, rotissery seasoning, rosemary, and celery salt)
