I get bored easily when it comes to food. I have a bad case of Food ADD.
Let me explain…
I cannot have the same meal every week. I just can’t do it. If I had chili dogs last week, I cannot have them again this week. If I had meatloaf cupcakes last Sunday for dinner, you will NOT see it on the menu again for at least 2 weeks.
This is great for my family, because they get a wide variety of different meals. This is great for me because I am forced to recipe hunt and challenged to new things. It can be quite stressful at times…so I have learned to keep track of the different recipes I try and like (I ♥ you Pinterest).
Another thing I have learned is to “tweak” recipes so that they are slightly different, rather than creating something completely new. Enter in pancakes. Great go-to breakfast choice (and even dinner!), but as I told you, I get bored with the “same ole same ole” quite fast. So this past week, my daughter and I decided to make different kinds of pancakes. Today I am going to share our favorite with you…
Banana Chocolate Chip Pancakes
-milk (I use vanilla soy milk)
-Follow the steps/ingredient amounts on the box of the pancake mix.
-Chop up banana(s) and add to mix.
-Add 1/2 cup to 1 cup of chocolate chips to the mix (depending on how much you like chocolate and how many pancakes you are making).
-Cook as directed on box.
I cook the smallest amount of pancakes listed on the box and only use 1-2 bananas and 1/2 cup chocolate chips. If we have leftovers, I wrap them up and stick them in the fridge/freezer for another time.
You can add all kinds of things to your pancakes…get creative! Blueberries, strawberries, cranberries, nuts, peanut butter chips, white chocolate chips, butterscotch chips, granola, etc.
We top our pancakes with syrup, powdered sugar and on occasion, a little whip cream.
