Cheesy Chicken Enchilada Casserole

Now that fall is approaching and the weather is starting to cool down, we are all about eating al fresca. Whether it’s tailgating or hosting a backyard party, you can be sure that my favorite part of a get together is the food! Am I right? I’ve got a quick and easy recipe for you that’s perfect for tailgating season. Check out this Cheesy Chicken Enchilada Casserole!

This casserole is seriously so so good y’all. It’s cheesy and full of flavor, plus it’s super easy to throw together. Your family and guests will be sure to compliment you in between cheesy bites.

Let’s get down to business and make some casserole, shall we? Head to your local Walmart and pick up the following ingredients:

  • Kraft Natural Shreds (16oz) Mexican Style
  • Kraft Natural Chunk (8oz) Chipotle
  • corn tortillas
  • 1 can red enchilada sauce
  • shredded chicken
  • salsa
  • salt, pepper
  • 3 stalks green onion diced
  • 1 avocado chopped

Preheat your oven to 375*, open the can of enchilada sauce, tear about 15-20 corn tortillas in 1/4s, and grab a casserole dish. To make this recipe super simple, I usually use leftover chicken or rotisserie chicken and shred it with a fork and toss it in salsa. Cube about 1/4-1/3 of the Kraft Natural Chunk (8oz) Chipotle cheese and set aside. In the casserole dish, pour a thin layer of enchilada sauce and layer the torn tortillas, chicken, and cubed cheese. I usually go 2 layers up, but your can go 3 if you have enough room in your dish.

To top the casserole, put another layer of torn tortillas and the rest of the enchilada sauce.

Now it’s time to cheese it up! Sprinkle 1-2 cups of Kraft Natural Shreds (16oz) Mexican Style cheese over the top. I love Kraft Natural Shreds because it saves me time… no shredding by hand necessary!

Next, sprinkle the diced green onion over the cheese and put in the over for 20 minutes.

After your casserole is baked and the cheese is all melty, pull it out of the oven and let cool for 5 minutes. Top with chopped avocado.

Look at that cheesy goodness. Now it’s ready to share with family and friends at your next tailgate party!

Food-a-licious Friday {84} Breakfast Pizza

To make meal planning easier, I make breakfast for dinner once a week. I’m not sure why, but breakfast foods always seem to be quick and easy to put together and the cost is very low. Not to mention, totally kid-friendly.
I try to find different ways to make breakfast for dinner so we aren’t having scrambled eggs and waffles every week. One of my girlfriend’s asked if I had ever tried Breakfast Pizza before. 
Breakfast Pizza??
WHAAAAT? 
That’s when I decided that this week, we shall have Breakfast Pizza for dinner! I’m told there’s a ton of ways to do this, but today I am going to share how I made it for my family (even chef husband liked it…score!). 
Ingredients:
2 cups of pancake mix (Bisquick)
1 1/3 cups water
8-12 turkey sausage links 
6-10 pieces of turkey bacon
8 large eggs
2 cups shredded cheddar cheese
salt & pepper to taste
Directions:
In a mixing bowl, mix the pancake mix and water until smooth. 
Spray your 9×11 rectangular cake pan with cooking spray and poor pancake mix in, making sure the bottom of the pan is covered in mix.
Place in oven at 350* for 10-12 min.
While your waiting for the “crust” to pre-cook, cook your sausage and bacon and chop up.
In a bowl, mix the eggs, salt, and pepper with a fork (I like to add parmasan cheese and a splash of water to mine) and set aside.
Pull the “crust” out of the oven and spread the chopped/cooked bacon and sausage over it. Then slowly dump the scrambled eggs on top of that. Lastly, spread out the shredded cheddar cheese on top.
Put back into the oven at 400* for 15-20 minutest (or until cheese is melted and bubbly).
Remove from oven and let cool for 5 min before cutting.
My daughter likes to dip her Breakfast Pizza in syrup but I prefer gravy.
SO easy and SO food-a-licious.

Food-a-licious Friday {81} Estle Family Casserole

One of my cute friends is super creative in the kitchen and I asked her if she’d share some of her favorite family recipes with us. Brittney and I went to high school together…so we go waaaay back. She married her high school sweetheart and they have 2 of the most adorable kids you ever did see. 
 
Take it away Brit!
 
Broccoli Rice and Chicken Casserole 
(Feeds 4-6) 
 
Ingredients:
 2.5 cups cooked rice (5 minute, white, or brown)
 1 bag frozen or fresh broccoli 
 1-2 chicken breasts (or I often use leftover grilled chicken from the night before)
 1 can cream of mushroom soup (or cream of celery if you’re not into mushrooms)
 1 cup shredded cheese (cheddar, colby or mexi blend)
Salt and pepper to taste

Directions: 
So start with boiling chicken until cooked through, then shred (or dice leftover chicken into small pieces).  
Put cooked chicken, frozen or fresh brocoli, cream of mushroom soup, and cooked rice in a big bowl and stir until blended.  I add salt and pepper here.  (if  you’re into garlic salt, through that in too)  
Pour entire bowl into caserole dish and spread out evenly.  
Sprinkle cup of cheese on top and bake for 20 minutes at 350 degrees.  
 
Easy and everyone eats it; even my 1 year old!  Oh and it makes great leftovers!

Food-a-licious Friday {62} Enchilada Casserole

Hi there!
How’s your first week of January 2012 going for you? I’ve gotten quite a bit done this week, so I’m feeling productive and accomplished for the most part. 
Today I am sharing a very simple casserole recipe for all those Mexican food lovers out there.  Casseroles are so convenient…you throw all of the ingredients in a pan and bake it. Sounds like the perfect plan for a busy week night. Let’s get started…
{Ingredients:}
4-6 cups of cooked, shredded chicken
1-2 cups of light sour cream
1-2 cups of salsa 
1 package of corn tortillas
1 large can of green enchilada sauce
3 cups of shredded, mixed cheese
optional: If you like spicy, you can also use chopped green chilies
{Steps:}
1. Preheat your oven to 375 degrees.
2. In a mixing bowl, mix the sour cream, salsa, and 1 cup of shredded cheese. (And if you want it spicier, add in the chopped chilies). 
3. Add your shredded chicken to the mixing bowl and carefully fold ingredients together.
4. Spray your 13×9 pan with cooking spray.
5. This casserole is layered (like lasagna), so start with putting corn tortillas on the bottom. You can tear them or leave them whole…I do a combination of both.
6. Then scoop some of the chicken mix onto the tortillas and drizzle a bit of the enchilada sauce on top.
7. Continue laying your ingredients until you run out. Your last layer should be one more layer of tortillas, then pour the rest of the enchilada sauce on top, and sprinkle the remaining 2 cups of shredded cheese. 
8. Put your pan in the over for about 25-30 min. or until the cheese is melted and bubbly. 
9. Let cool for about 5 min., serve and enjoy with a side of rice!
There you have it! Enchilada Casserole and it’s super YUMMY. 
My husband is not a lover of casseroles like myself, but her LOVES this one. 
A couple of great things about this meal…
a) You are bound to have leftovers
b) You can use leftover chicken from another meal to make this casserole.

Food-a-licious Friday #21: Tatertot Casserole

I’m kind of a casserole fan.

Remember the easy Breakfast Casserole from last week?

This one is yummy and easy too : )

A childhood friend’s mom used to make this dinner…and it since my first taste, it has been one of my favorites.

Filling. Comforting. Delicious.

Tatertot Casserole

INGREDIENTS:

-1/2 pound ground beef/turkey

-1 can green beans

-2 cans cream of celery soup (you can sub 1 of the cans for cream of mushroom if you roll like that)

-1 bag of frozen tatertots

-1 cup shredded mozzarella cheese

-salt, pepper, onion powder

STEPS:

1. Preheat oven to 425 degrees

2. Cook beef/turkey meat in skillet and season

3. Combine all ingredients in large mixing bowl (only use 1/2 cup cheese and half package of tatertots)

4. Pour and spread evenly in greased casserole dish

5. Pour remaining 1/2 bag of tatertots on top of mixture and press down firmly

6. Sprinkle remaining 1/2 cup of shredded cheese on top of casserole evenly

7. Cover with aluminum foil and back for 30 min.

8. Remove aluminum foil and back another 15 min. to brown tatertots
*You can also broil on low…be sure to watch it though so you don’t burn it. Broiling speeds up the browning process.

9. Remove from oven and let cool.

10. Serve and ENJOY!

Easy, inexpensive, kid friendly, and YUMMY!

Hello friends! Welcome to another Food-a-licious Friday! I am excited to re-share (yes, I made that word up) this recipe with you today!

 I have the easiest, yummiest breakfast casserole recipe that I got from my brother-in-law. You just have to try it. I’m pretty sure his family eats this for…well…breakfast. But my family has this dish for supper. If you have not tried having a breakfast dish for dinner, please do!!! Especially if you have kiddos around…for whatever reason, it’s a real treat (and breakfast foods are totally cheap!).

As I’ve mentioned before, I often modify recipes that I find or that are shared with me. So feel free to modify this one to your liking.

You will need:

  • 5 eggs
  • 1/2 cup of half and half
  • bag of frozen hashbrowns
  • 4 table spoons of butter (I use Can’t Believe It’s Not Butter)
  • 2 cups cubed ham (you can use bacon or sausage or a combination)
  • 2 cups shredded cheese (I use mixed cheeses)
  • seasonings (salt, pepper, onion powder, etc.)
Preheat oven to 350 degrees. Spray casserole dish (I use Pam) and place frozen hash browns at the bottom. Pat down. I season my potatoes with onion powder, seasoning salt, garlic powder, and pepper. Then goes in the 4 tablespoons of butter….try to distribute evenly. Sprinkle thin layer of cheese. Sprinkle on ham evenly. In separate bowl, beat eggs and half and half (I also season this with salt and pepper). Pour over hash browns and ham. Top with the rest of your cheese. Bake for 30-40 minutes.
See!!! So easy! So cheap! Sooooo yummy! You could even add in bacon (which I’ve done…yummo!) or sausage.
