Pumpkin Snickerdoodle Cookies

Hello there, makers! As soon as fall hits, I’m all about the pumpkin. Pumpkin decor and pumpkin flavor. Gimme all the pumpkin.

I thought I would whip up a batch of our favorite cookies, but with a pumpkin twist. I was hoping they would turn out delicious, and they did. Say hello to these Pumpkin Snickerdoodle Cookies!

They were fluffy and had the perfect combination of pumpkin and cinnamon mixed into a cookie. They are definitely a must try if you are a fan of pumpkin like myself.

Ready for the recipe?! I pretty much took my snickerdoodle cookie recipe and added some organic canned pumpkin to the mix.

Your traditional snickerdoodle cookie with a pumpkin twist! Perfect for fall.

For Cookies
  1. 3 3/4 cups flour (gluten free flour optional)
  2. 1 1/2 tsp baking powder
  3. 1/2 tsp salt
  4. 1/2 tsp cinnamon
  5. 1/2 tsp nutmeg
  6. 2 sticks butter, room temperature
  7. 1 cup sugar
  8. 1/2 cup brown sugar
  9. 1 cup organic pumpkin puree
  10. 2 tsp vanilla extract
  11. 1 egg
For Coating
  1. 1/2 cup sugar
  2. 1 tsp cinnamon
  3. 1/4 tsp nutmeg
Instructions
  1. 1. Mix dry ingredients in medium bowl (flour, baking soda, salt, cinnamon, nutmeg).
  2. 2. In large bowl, mix butter, sugar, brown sugar, pumpkin, egg, and vanilla together.
  3. 3. Stir dry ingredients into wet ingredients. Cover and place in fridge to chill for an hour minimum.
  4. 4. Preheat oven to 350* and in a shallow bowl mix coating ingredients together.
  5. 5. Roll dough into 1-1.5" balls and then roll in sugar/cinnamon/nutmeg coating. Place on greased baking sheet (or on parchment paper or a Silpat). Press lightly on dough balls to slightly flatten.
  6. 6. Bake for 12 minutes. Remove from oven and allow a few minutes to cool before removing them from the pan.
  7. 7. Enjoy!
Notes
  1. *Optional: Add a dash of pumpkin spice to coating mix for even more pumpkin flavor!

Baked Cinnamon Vanilla Pears

Hello and Happy Monday, makers! I just got back from a blogger conference trip and I am refueled and ready to crush some creative goals. I have a few recipes that I have wanted to share for a while now, so I thought no better time than now! One of my favorite desserts to make for my family is my Baked Cinnamon Vanilla Pears. This recipe is super easy (even the kids can help!), it’s so delicious, and it makes your house smell AMAZING.

Don’t they look amazing? Okay here is what you are going to need to make them for your family (recipe feeds 8). Everything can be found at your local Smart & Final.

  • 4 pears
  • 1-2 tsp cinnamon
  • 4 tsp vanilla
  • 4 tsp brown sugar
  • honey and oats granola with almonds

While you prep your dessert, preheat the oven to 350*. First, cut your pears in half and use a spoon to carve out the centers where the seeds are. Lay them in a pie dish, open side facing up.

Next you are going to sprinkle each pear half with cinnamon, 1/2 teaspoon of brown sugar,  and 1/2 teaspoon of vanilla.

Now all you need to do is top each pear half with granola. My favorite granola is Smart & Final’s Honey and Oats Granola with Almonds, so I used that.

Your oven should be preheated by the time you finish prepping your pears. Just pop them in the oven for 10-15 minutes, rotating the pie dish half way through.

Once your pears are done baking, take them out to cool for a couple of minutes. Then they are ready to serve and eat!

The sweetness of the pear and the crunch of the granola are a match made in heaven. It’s even great paired with a scoop of vanilla ice cream!

It’s the week of Halloween and we are busy getting our homeschool co-op party on, heading to the pumpkin patch, painting and carving pumpkins, and even making some fun Halloween treats! Today, I am sharing how my daughter and I made spooky Graveyard Pudding! It’s so easy and so fun for the kids to participate in.

Cute with a side of spooky, right? There’s only a few things you will need to make Graveyard Pudding and it all can be purchased at your local Walmart along with all of your other Halloween essentials.

Pick yourself up some Super Snack Packs (Chocolate, Vanilla, or Chocolate Vanilla combo), OREOS, HONEY MAID Graham Crackers, baking gel, and any other Halloween candy you’d like to add.

First, you want to smash one OREO per Super Snack Pack. You can do this in a baggie or right on your cutting board. The kids love this step.

Next, open your choice of Super Snack Pack and sprinkle the crushed OREO on top. This represents the soil in the graveyard.

Break off one rectangle of the HONEY MAID Graham Crackers and use the gel to carefully write RIP at the top. This will represent the tombstone.

Stick your edible tombstone into the pudding and place any other Halloween candy you’d like on your Graveyard Pudding.

For the finishing touch, we added a homemade cupcake liner to the bottom of the Super Snack Pack cups. I used a creepy looking fence download from the Silhouette online store and some black and white card stock and used my Silhouette Cameo to cut them out. Now it’s time to cue the spooky music and grab a spoon, don’t you think?!

We had so much fun making these fun snacks together. Snack Packs give you that childhood nostalgia, wouldn’t you agree? It’s definitely a recipe we will continue to use each year. Yay for fun family traditions!

Not only is this Halloween treat great for an after school snack, but this would be great to make on a play date, with a co-op group, or for a classroom or holiday party!

It is literally my Halloween go-to store…. from costumes to decor to treats, they have you covered. Mini Monster Pies

With Halloween around the corner, we have been busy in the kitchen making some fun holiday treats! Because I teach kids’ culinary classes, I often come up with fun and creative food ideas for the little ones to do and holiday themed recipes are the best! This past weekend we made these yummy Mini Monster Pies.

Would you believe there are only 3 easy ingredients in these pies?

To make the pies, you will need:

  • Dannon® Greek Yogurt Oikos® Pumpkin Pie (3 containers)
  • Keebler Ready Crust Mini Pie Crusts (6 count)
  • Reddi-wip® original

One container of yogurt will fill 2 of the mini pie crusts. So spoon in half of the container of yogurt into the pie crust and smooth with the back of the spoon.

You’re ready to create your monster face! You can use whatever candy, cookies, nuts, etc that you like. You can even make these again after Halloween with your leftover Halloween candy!

These are so super easy for your little ones to make and they can be creative as they want with the monster faces.

Pecan Pie Cookie Sandwiches

It’s finally below 100* here in Arizona, so that means it’s officially fall baking time! Woohoo! My daughter and I couldn’t be more excited for baking season to start. We have lots of fall favorites, but we wanted to create something new year. Check out these yummy Pecan Pie Cookie Sandwiches we came up with!

They taste just as delicious as they look, y’all. We had lots of fun incorporating different fall flavors in this simple cookie recipe. We purchased all of the ingredients at our local Walmart.

INGREDIENTS:

  • Pillsbury™ Moist Supreme® Cake Mix
  • Pillsbury™ Creamy Supreme® Cream Cheese Icing
  • 1/4-1/2 cup M&M’s® Pecan Pie 9.9oz
  • 1/8 cup Snapple® Apple
  • 1/3 cup Mott’s® Apple Sauce Original

I love using cake mix to make cookies. They are so fluffy and light, like cake. I also like substituting apple sauce for oil in baking cookies because it also gives the cookie a moist, fluffy appeal. Now, let’s get to baking, shall we?

Preheat your oven to 375*. In a mixing bow, combine cake mix, 2 eggs, and 1/3 cup of apple sauce. Scoop balls of dough onto your baking sheet, spacing them out as needed. Lightly press M&M’s® Pecan Pie into the tops of the cookie dough balls. Place in the oven to bake for 8-10 minutes.

Pull cookies from the oven after baking and allow time to cool on the cooling rack.

While your cookies are cooling, mix 1/8 cup Snapple® Apple into the Pillsbury™ Creamy Supreme® Cream Cheese Icing and place in the fridge to keep cold.

S’mores Chocolate Malt Custard Cookie Stack

On a super hot summer day, the only thing I want to eat is something cool and refreshing. And here in Arizona, it’s pretty dang hot right now. After making a homemade dinner, it’s nice to be able to quickly throw a yummy, refreshing dessert together for the family. This S’mores Chocolate Malt Custard Cookie Stack does just the trick.

Often times I don’t make dessert because I don’t have the time or energy for it. Can you relate? This cookie stack recipe is so delicious and so quick to make, it’s something even the busiest mom can do.

You will need:

  • graham crackers/cookies (I prefer the gluten free brand at Safeway)
  • marshmallows
  • butter
  • DREYER’S Frozen Custard Chocolate Malt (also purchased at Safeway)

In a small saucepan, melt about a tablespoon of butter and add in about 1/2 cup of marshmallows. Stir slowly letting the butter and marshmallows combine. Once the marshmallows are melted down, you can start building the cookie stack.

Place a graham cracker on a plate, then a scoop of DREYER’S Frozen Custard Chocolate Malt on top, then add another graham cracker on top of the custard, and continue this pattern until you are 3 graham crackers and two scoops of DREYER’S Frozen Custard high.

Slowly drizzly the melted marshmallows over the top of the cookie stack…

Browned Butter Chocolate Chip Cookies

Happy Friday friends!

Healthy eating doesn’t mean we can’t enjoy all the goodness that comes from a hot, right out of the oven, ooey gooey chocolate chip cookie. These cookies are made by browning the butter and adding just the right ingredients to make each chocolate morsel melt in your mouth. Replacing the sugar and brown sugar with Splenda sugar blends helps reduce the calories and amount of sugar per cookie. So with only 96 calories and 4 grams of fat, it’s hard to resist these Browned Butter Chocolate Chip Cookies. Mmmm mmmm good!

INGREDIENTS:

6 tablespoons unsalted butter

2 tablespoons canola oil

5.6 ounces all-purpose flour (about 1 1/4 cups)

3.3 ounces whole-wheat flour (about 3/4 cup)

1 teaspoon baking

1/2 teaspoon kosher

1/4cup + 2 Tbsp Splenda brown sugar blend

5 Tbsp + 1 tsp Splenda sugar blend

1/2 teaspoon vanilla

2 large eggs, lightly

1/2 cup semisweet chocolate chips

1/3 cup mini chocolate chips

RECIPE:

1. Preheat oven to 375°.

2. Heat butter in a small saucepan over medium heat; cook 5 minutes or until browned. Remove from heat; add oil. Set aside to cool.

3. Weigh or lightly spoon flours into dry measuring cups; level with a knife. Combine flours, baking powder, and salt, stirring with a whisk. Place butter mixture and sugars in a large bowl; beat with a mixer at medium speed until combined. Add vanilla and eggs; beat until well blended. Add flour mixture, beating at low speed until just combined. Stir in chocolate chips.

4. Drop by level tablespoonfuls 2 inches apart onto baking sheets lined with parchment paper. Bake 12 minutes or until bottoms of cookies just begin to brown. Cool slightly.

Food-a-licious Friday: Brownies in a Jar

Hello there and Happy Friday! Are you ready for Christmas? I have a few more presents to wrap and I am done with gifts. I still have plenty of baking to do, so I am so glad Erin, our recipe contributor, is here to share a yummy holiday treat with us today! It also make the PERFECT gift to give during this holiday season. Check out this recipe for Brownies in a Jar.

Christmas is quickly approaching! I know I am far from ready. I have been making these Brownies in a Jar as Christmas gifts for the better part of 15 years. They are perfect for coworkers, neighbors, and friends. This way they can enjoy them after the holidays are over and the plethora of Christmas cookies have gone away. This brownie recipe is the best I have ever had. I have a weakness for brownies and make a couple batches this time of year. Mostly to make my house smell heavenly.

INGREDIENTS

1 cup flour

 ½ tsp salt

12 tablespoons unsweetened cocoa, divided

1 ½ cups granulated sugar, divided

½ cup packed brown sugar

½ cup semi-sweet chocolate chips

DIRECTIONS

1. Mix flour and salt. Spoon mixture into a 1 quart mason jar.

2. Add the following, tapping jar to settle ingredients: 6 tablespoons unsweetened cocoa, ¾ cup granulated sugar, brown sugar, ¾ cup more granulated sugar, then 6 tablespoons more cocoa.

3. Top with chocolate chips. Close lid.

4. Tie baking instructions tag to jar.

If you are going to make these for yourself, you will need ½ cup melted butter, 3 eggs, and ½ teaspoon of vanilla. Put all of the ingredients that were to go into the jar into a bowl. Stir in the butter, eggs, and vanilla. Follow the baking instructions below.

To bake (this is what needs to go on the tag) : Heat oven to 350 degrees. Grease 9 inch square pan. Whisk brownie mix in a bowl. Stir in ½ cup melted butter, 3 eggs, beaten, and ½ teaspoon vanilla. Spread into pan. Bake until toothpick inserted in center has a few crumbs, about 35 minutes. Cool. Makes 12.

I just love how the ingredients look layered in the mason jar. Be sure to include a tag with the baking instructions if you will be giving as a gift. I just LOVE handwritten recipe cards. You can use these cute, free Snowman recipe card print outs I found to attach to the jar too! This would make the perfect gift for teachers, coaches, co-workers, neighbors, grandparents, etc!
