Gluten Free Pumpkin Bread

Hello there makers! I’m all about Christmas decorating, crafting, and shopping… how about y’all? Although I’m completely in the Christmas spirit, I’m still looking forward to Thanksgiving (around the Christmas tree) with my family. I’ve been experimenting in the kitchen, turning some of my favorite recipes into gluten free versions. I’m also trying to limit my sugar intake and completely get rid of dairy. But I love food, so I had to figure out a way to not sacrifice some of my very favorite things because of my new no sugar, no dairy, no gluten choices. And one of my favorite things to bake up during fall and winter is pumpkin bread. After some trial and error, I have a delicious Gluten Free Pumpkin Bread recipe to share with y’all.

I wish you could have smelled my house as this was baking. My daughter kept coming downstairs to ask if it was ready to eat. It’s an absolute MUST try if you love pumpkin bread.

Ingredients:

  • 1/3 cup coconut oil, melted (butter replacement)
  • 3/4 cup of maple syrup (sugar replacement)
  • 2 eggs
  • 1 cup of pumpkin puree (not pumpkin pie filling)
  • 1 tsp vanilla
  • 1/4 cup of vanilla or plain nut milk (I used almond)
  • 1/2 tsp cinnamon, 1/2 tsp nutmeg, 1/2 tsp cloves
  • 1/2 tsp salt
  • 1 tsp baking soda
  • 1 1/2 – 1 3/4 cups of gluten free baking flour (I use Bob’s Red Mill)

Directions:

Preheat your oven to 350* and grease your loaf pan with coconut oil. In a mixing bowl, whisk together the coconut oil and syrup. Then add the eggs, milk and pumpkin and whisk again. Next, whisk in the seasonings, baking soda, and flour (start with 1 1/2 cups of flour and add a bit more if needed). Don’t over whisk…it’s not good for the bread! It’s okay if it’s a little lumpy. Pour the pumpkin bread mixture into your greased loaf pan and sprinkle the top with cinnamon. Bake for 50 minutes to an hour. I always check it at 50 minutes with a toothpick. If it needs a bit more time, I turn off my oven but leave the loaf in it for another 5-10 minutes. Remove from the oven and allow cool time. Then it’s ready to serve!

If you wanted to, you could add chocolate chips or raisins or chopped nuts to your mix also! Variety is always a good thing. 

I love it just like this, but my husband and daughter love to smear butter on it. I probably would if I wasn’t trying to limit my dairy intake. Either way, it’s delicious with or without!

Chocolate Candy Cookies

Hi friends! Im excited to share this yummy cookie recipe with you today! It’s the perfect time of year to make these cookies because they are SO versatile and you can use some of that pesky Halloween candy you have laying around. We always pick 3 chocolate candies for our Chocolate Candy Cookies, but you can do it however you want!

I love making these cookies after trick-or-treating because it uses up some of the candy. You can make several batches to use up even more and you can make different combinations. Today, I’m sharing the cookies we made using M&Ms and chopped up mini Snickers and mini Reeses cups. It was a really yummy combo. 

Here’s what you’ll need to make your own Chocolate Candy Cookies…

Ingredients:

  • 3/4 cup of butter (or coconut oil)
  • 3/4 cup of brown sugar
  • 1/4 cup granulated sugar
  • 1/2 tsp salt
  • 2 tsp vanilla
  • 1 egg
  • 1 tsp baking soda
  • 2 cups flour
  • 1 cup chocolate candies

Directions:

Preheat oven to 350*. Mix butter and sugar together well. Then mix in vanilla and egg. In a separate bowl, mix flour, salt, and baking soda. Then add the dry ingredients to the wet ingredients, mixing well. Fold in chocolate candies. Chill in the fridge for 10 minutes. Form into balls and place on cookie sheet. Bake for 10 minutes. Cool for 3 minutes. EAT YOUR HEART OUT!

Tip: I love using my Silpat mat for baking cookies! They come out perfect every time.

They are SO delicious and so versatile. Next time my daughter wants to use KitKats, Twix, and Butterfingers in the cookie mix. Sounds like a plan!

Best Eats at Knott’s Berry Farm

Hello there makers! We are back from one of our many California vacations for the summer and we had a great time beating the heat in Arizona for a few days. We spent one day at the beach in beautiful 75* weather and we spent the next full day at Knott’s Berry Farm with our best friends. It was such a fun trip full of laughs, roller coasters, and yummy food. We’ve been lots of times (we love it there), so I thought it would be fun to share some of the Best Eats at Knotts Berry Farm. Because let’s face it, it’s not just about the rides. It’s about the food too!

Ghost Town has a lot of our favorite foods! We each get something throughout the day (before standing in line for another roller coaster) and share! Sutter’s Grill/Funnel Cake and Log Ride Funnel Cake have the most delicious funnel cakes in the history of ever. I especially love it with boysenberry and powdered sugar, but you can get it in a variety of ways.

Calico Fry Co. has delicious fries with a variety of yummy toppings. They serve them in a box, so grab a couple of forks and eat them while you’re in line for a ride or watching a show. 

The Gourmet Churro Factory has delicious churro sundaes that are a MUST try. And also totally shareable. 

Sutter’s Grill also has delicious, hand-dipped corn dogs and waffle fries. Talk about YUM!

My all time favorite treat to get when visiting Knotts Berry Farm is the delicious boysenberry soft serve ice cream cone. It’s seriously the perfect summer treat, but I’d eat it year round, y’all!

Fireman’s BBQ has the most delicious barbecue. My two favorite things to get from here are the fire roasted corn and the turkey legs. I know Disneyland is known for their turkey legs, but I promise you, you’ll be a fan of Knott’s Berry Farm’s as well. 

If you feel like sitting down for a meal with the family, I recommend Ghost Town Grill. They have a great menu. I especially love that the burgers come with a side of boysenberry aioli. Note: you can get gluten free buns or go bunless on your burgers upon request! 

Ghost Town Bakery has fresher baked goods that are must tries. The huge boysenberry donuts are my favorite, but the soft cookie sandwiches filled with boysenberry mousse are delicious too.

If you need a quick pick-me-up, head over to the Boardwalk’s Gourmet Coffee Hut for a Boysenberry Latte. It’s delicious! I recommend asking it for half sweet (2 pumps instead of 4) and it’s the perfect hint of boysenberry in your latte. 

And of course, you can never go wrong with the famous chicken dinner at Mrs. Knott’s Chicken Dinner Restaurant. After all, it’s how Knott’s Berry Farm got started.

Be sure you stop in at the General Store for all the berry goodness Knott’s has to offer. From salsa to honey to candy to jam… they have it all! I love souvenirs you can take home and eat later. #foodismylovelanguage

Hello friends! Welcome to another week of Must Have Craft Tips! Kara from Mine for the Making here this week to share 15 Heart Shaped Foods… just in time for Valentine’s Day. Baked Cinnamon Vanilla Pears

Hello and Happy Monday, makers! I just got back from a blogger conference trip and I am refueled and ready to crush some creative goals. I have a few recipes that I have wanted to share for a while now, so I thought no better time than now! One of my favorite desserts to make for my family is my Baked Cinnamon Vanilla Pears. This recipe is super easy (even the kids can help!), it’s so delicious, and it makes your house smell AMAZING.

Don’t they look amazing? Okay here is what you are going to need to make them for your family (recipe feeds 8). Everything can be found at your local Smart & Final.

  • 4 pears
  • 1-2 tsp cinnamon
  • 4 tsp vanilla
  • 4 tsp brown sugar
  • honey and oats granola with almonds

While you prep your dessert, preheat the oven to 350*. First, cut your pears in half and use a spoon to carve out the centers where the seeds are. Lay them in a pie dish, open side facing up.

Next you are going to sprinkle each pear half with cinnamon, 1/2 teaspoon of brown sugar,  and 1/2 teaspoon of vanilla.

Now all you need to do is top each pear half with granola. My favorite granola is Smart & Final’s Honey and Oats Granola with Almonds, so I used that.

Your oven should be preheated by the time you finish prepping your pears. Just pop them in the oven for 10-15 minutes, rotating the pie dish half way through.

Once your pears are done baking, take them out to cool for a couple of minutes. Then they are ready to serve and eat!

The sweetness of the pear and the crunch of the granola are a match made in heaven. It’s even great paired with a scoop of vanilla ice cream!

It’s finally below 100* here in Arizona, so that means it’s officially fall baking time! Woohoo! My daughter and I couldn’t be more excited for baking season to start. We have lots of fall favorites, but we wanted to create something new year. Check out these yummy Pecan Pie Cookie Sandwiches we came up with!

They taste just as delicious as they look, y’all. We had lots of fun incorporating different fall flavors in this simple cookie recipe. We purchased all of the ingredients at our local Walmart.

INGREDIENTS:

  • Pillsbury™ Moist Supreme® Cake Mix
  • Pillsbury™ Creamy Supreme® Cream Cheese Icing
  • 1/4-1/2 cup M&M’s® Pecan Pie 9.9oz
  • 1/8 cup Snapple® Apple
  • 1/3 cup Mott’s® Apple Sauce Original

I love using cake mix to make cookies. They are so fluffy and light, like cake. I also like substituting apple sauce for oil in baking cookies because it also gives the cookie a moist, fluffy appeal. Now, let’s get to baking, shall we?

Preheat your oven to 375*. In a mixing bow, combine cake mix, 2 eggs, and 1/3 cup of apple sauce. Scoop balls of dough onto your baking sheet, spacing them out as needed. Lightly press M&M’s® Pecan Pie into the tops of the cookie dough balls. Place in the oven to bake for 8-10 minutes.

Pull cookies from the oven after baking and allow time to cool on the cooling rack.

While your cookies are cooling, mix 1/8 cup Snapple® Apple into the Pillsbury™ Creamy Supreme® Cream Cheese Icing and place in the fridge to keep cold.

Cheesy Chicken Enchilada Casserole

Now that fall is approaching and the weather is starting to cool down, we are all about eating al fresca. Whether it’s tailgating or hosting a backyard party, you can be sure that my favorite part of a get together is the food! Am I right? I’ve got a quick and easy recipe for you that’s perfect for tailgating season. Check out this Cheesy Chicken Enchilada Casserole!

This casserole is seriously so so good y’all. It’s cheesy and full of flavor, plus it’s super easy to throw together. Your family and guests will be sure to compliment you in between cheesy bites.

Let’s get down to business and make some casserole, shall we? Head to your local Walmart and pick up the following ingredients:

  • Kraft Natural Shreds (16oz) Mexican Style
  • Kraft Natural Chunk (8oz) Chipotle
  • corn tortillas
  • 1 can red enchilada sauce
  • shredded chicken
  • salsa
  • salt, pepper
  • 3 stalks green onion diced
  • 1 avocado chopped

Preheat your oven to 375*, open the can of enchilada sauce, tear about 15-20 corn tortillas in 1/4s, and grab a casserole dish. To make this recipe super simple, I usually use leftover chicken or rotisserie chicken and shred it with a fork and toss it in salsa. Cube about 1/4-1/3 of the Kraft Natural Chunk (8oz) Chipotle cheese and set aside. In the casserole dish, pour a thin layer of enchilada sauce and layer the torn tortillas, chicken, and cubed cheese. I usually go 2 layers up, but your can go 3 if you have enough room in your dish.

To top the casserole, put another layer of torn tortillas and the rest of the enchilada sauce.

Now it’s time to cheese it up! Sprinkle 1-2 cups of Kraft Natural Shreds (16oz) Mexican Style cheese over the top. I love Kraft Natural Shreds because it saves me time… no shredding by hand necessary!

Next, sprinkle the diced green onion over the cheese and put in the over for 20 minutes.

After your casserole is baked and the cheese is all melty, pull it out of the oven and let cool for 5 minutes. Top with chopped avocado.

Look at that cheesy goodness. Now it’s ready to share with family and friends at your next tailgate party!

How was your holiday weekend, friends? Ours was busy but we were about to carve some time away to pull out the grill! I LOVE grilling… the smell is so nostalgic for me. Lots of backyard barbecues when I was growing up. This weekend we decided to grill up some Tiki Orange Cornish Hens and veggies. Y’all… it was delicious!! Probably one of my favorite recipes for the grill to date.

INGREDIENTS:

  • 2 Tyson® Cornish Hens
  • bell peppers (any colors you like)
  • onion
  • 1 orange (+ zest of orange)
  • 1 1/2 tbs Kikkoman® Soy Sauce
  • 1 cup orange juice (pulp free)
  • salt
  • 10 drops lime juice
  • 1 1/2 tbs water
  • 3 tbs sugar
  • 5 tbs white vinegar
  • 1/2 tsp garlic (minced)
  • 1 tsp ginger (minced)

After you purchase your ingredients from your local Walmart, defrost the Tyson® Cornish Hens, chop your veggies, and heat up your grill. Once they are defrosted, squeeze a slice of orange (1/6 of the orange) over each hen and stuff the hen with the orange slice. Massage salt and the juice into the hens and place them on the hot grill to add grill marks on both sides (about 1-2 min on each side). Take the hens off and wrap each in aluminum foil. Turn the heat down low on the grill and place the hens back on. Cover the grill and cook for about 30-40 minutes.

While hens are cooking on the grill, add your chopped veggies to skewers and set aside. In a bowl wisk together the juice of the orange, zest of the orange, cup of orange juice, water, vinegar, sugar, lime juice, garlic, ginger, and Kikkoman® Soy Sauce. Reduce to 1/4 on the stove top until it is the consistency of a glaze (as it cools it thickens).

Take the tiki orange glaze and skewers to the grill and uncover the hens. Place the skewers on the grill and brush the glaze all over the hens and the veggies. Leave veggies on the grill for about 5-10 minutes while your are basting the hens. Be sure to turn your veggies so that they grill up on all sides.

Remove everything from the grill and plate. This meal is great on a bed of fresh spinach, with a side of jasmine rice, or roasted red potatoes!

Find all the ingredients for this recipe at your local Walmart. You can find the Kikkoman® Soy Sauce in the Asian Foods aisle and the two pack of Tyson® Cornish Hens in the frozen poultry section.

They are so good and kids will love them! When I was growing up, Cheerios ™ was a staple in my home. It was used as breakfast with a bowl of milk or as an afternoon snack, dry. The best part about this recipe is that it’s gluten free. That’s right… even the Cheerios! Cheerios products will maintain the same great taste that consumers love and with the exception of Multigrain, none of the other products needed to be reformulated. Cheerios are made with Whole Grain Oats as the first ingredient. Oats are inherently gluten free, but the supply of oats contain small amounts of wheat, rye and barley that are inadvertently introduced at the farm or during transportation which prevents the product from being labeled Gluten Free. General Mills developed a process to remove the wheat, rye and barley from our supply of whole oats in order to ensure that the oats in Cheerios are Gluten Free. To celebrate the new Gluten-Free line, Cheerios has launched the Buy-A-Box-Give-A-Box Coupon program. Each box of Cheerios will have a unique code where shoppers can enter that online and give an e-card and mailed coupon for a free box of Cheerios to a recipient of their choice! How fun is that? I sent a box to my friend of mine with Celiacs disease and it was so simple…I did it right from my phone!

(I didn’t take a picture of the E-card I picked for my friend, because she reads my blog and I want it to be a surprise! But trust me when I say ADORBS.) Took me two minutes…it was that easy!

Now that you’ve purchased your  Cheerios ™ and have gifted a box to a friend, it’s time to try out this yummy snack recipe with the kids.

INGREDIENTS:

  • Bananas
  • Nut butter
  • Cheerios ™
  • Cake pop or popsicle sticks

First, you want to cut your bananas in half and peal them. Insert the sticks into the bottoms of the bananas and wrap them in plastic wrap and stick them in the freezer for a few hours (or until frozen).

Next, soften your nut butter (we used peanut butter) in the microwave. Be sure it’s not hot. Remove the bananas from the freezer and plastic wrap. Coat the outside of the bananas with the softened nut butter.

Then roll or sprinkle the bananas with Cheerios ™. Put them on wax paper or a Silpat and stick back in the freezer for about an hour.

Remove the Frozen Banana Cheerios ™ Pops from the freezer and enjoy! If you make them ahead of time, just wrap them back up in the plastic wrap and stick them in the freezer. Fun and easy for the kids to make and they are super fun to eat too.
