Best Eats at Knott’s Berry Farm

Hello there makers! We are back from one of our many California vacations for the summer and we had a great time beating the heat in Arizona for a few days. We spent one day at the beach in beautiful 75* weather and we spent the next full day at Knott’s Berry Farm with our best friends. It was such a fun trip full of laughs, roller coasters, and yummy food. We’ve been lots of times (we love it there), so I thought it would be fun to share some of the Best Eats at Knotts Berry Farm. Because let’s face it, it’s not just about the rides. It’s about the food too!

Ghost Town has a lot of our favorite foods! We each get something throughout the day (before standing in line for another roller coaster) and share! Sutter’s Grill/Funnel Cake and Log Ride Funnel Cake have the most delicious funnel cakes in the history of ever. I especially love it with boysenberry and powdered sugar, but you can get it in a variety of ways.

Calico Fry Co. has delicious fries with a variety of yummy toppings. They serve them in a box, so grab a couple of forks and eat them while you’re in line for a ride or watching a show.

The Gourmet Churro Factory has delicious churro sundaes that are a MUST try. And also totally shareable.

Sutter’s Grill also has delicious, hand-dipped corn dogs and waffle fries. Talk about YUM!

My all time favorite treat to get when visiting Knotts Berry Farm is the delicious boysenberry soft serve ice cream cone. It’s seriously the perfect summer treat, but I’d eat it year round, y’all!

Fireman’s BBQ has the most delicious barbecue. My two favorite things to get from here are the fire roasted corn and the turkey legs. I know Disneyland is known for their turkey legs, but I promise you, you’ll be a fan of Knott’s Berry Farm’s as well.

If you feel like sitting down for a meal with the family, I recommend Ghost Town Grill. They have a great menu. I especially love that the burgers come with a side of boysenberry aioli. Note: you can get gluten free buns or go bunless on your burgers upon request!

Ghost Town Bakery has fresher baked goods that are must tries. The huge boysenberry donuts are my favorite, but the soft cookie sandwiches filled with boysenberry mousse are delicious too.

If you need a quick pick-me-up, head over to the Boardwalk’s Gourmet Coffee Hut for a Boysenberry Latte. It’s delicious! I recommend asking it for half sweet (2 pumps instead of 4) and it’s the perfect hint of boysenberry in your latte.

And of course, you can never go wrong with the famous chicken dinner at Mrs. Knott’s Chicken Dinner Restaurant. After all, it’s how Knott’s Berry Farm got started.

Be sure you stop in at the General Store for all the berry goodness Knott’s has to offer. From salsa to honey to candy to jam… they have it all! I love souvenirs you can take home and eat later. #foodismylovelanguage

So many yummy things to try when you visit Knott’s Berry Farm next! What’s your favorite treat to get when you visit?

We had the best girl’s trip to California and a day at Knott’s Berry Farm only made it better!

This trip was hosted by Knott’s Berry Farm, but all opinions and thoughts are completely my own. I only share things I love and think my readers will too.

Baked Cinnamon Vanilla Pears

This shop has been compensated by Smart & Final. All opinions are mine alone.

Hello and Happy Monday, makers! I just got back from a blogger conference trip and I am refueled and ready to crush some creative goals. I have a few recipes that I have wanted to share for a while now, so I thought no better time than now! One of my favorite desserts to make for my family is my Baked Cinnamon Vanilla Pears. This recipe is super easy (even the kids can help!), it’s so delicious, and it makes your house smell AMAZING.

pear bake7

Don’t they look amazing? Okay here is what you are going to need to make them for your family (recipe feeds 8). Everything can be found at your local Smart & Final.

  • 4 pears
  • 1-2 tsp cinnamon
  • 4 tsp vanilla
  • 4 tsp brown sugar
  • honey and oats granola with almonds

Pear Bake1

While you prep your dessert, preheat the oven to 350*. First, cut your pears in half and use a spoon to carve out the centers where the seeds are. Lay them in a pie dish, open side facing up.

Pear Bake2

Next you are going to sprinkle each pear half with cinnamon, 1/2 teaspoon of brown sugar,  and 1/2 teaspoon of vanilla.

Pear Bake3

Now all you need to do is top each pear half with granola. My favorite granola is Smart & Final’s Honey and Oats Granola with Almonds, so I used that.

Pear Bake4

Your oven should be preheated by the time you finish prepping your pears. Just pop them in the oven for 10-15 minutes, rotating the pie dish half way through.

Pear Bake5

Once your pears are done baking, take them out to cool for a couple of minutes. Then they are ready to serve and eat!

pear bake8

The sweetness of the pear and the crunch of the granola are a match made in heaven. It’s even great paired with a scoop of vanilla ice cream!

Pear Bake6

As I said before, all of my ingredients for this dessert were purchased at my local Smart & Final. By the beginning of summer, Smart & Final will have opened more than twenty new stores across California. Smart & Final Extra! are terrific new format stores that offer expanded “everyday” groceries such as shampoos, fresh produce, baked goods, to-go meals and baby products, all at warehouse prices (without needing a membership!). I absolutely love that Smart & Final is a one-stop shopping market with the lowest prices in town… perfect for time-starved moms like myself.

Join me for the Grand Opening sponsored Twitter chat on Wednesday April 27, 12-1PM PST, where Smart & Final will be giving away a $250 Smartcash Card to a random winner. We will be posing questions throughout the day about our Grand Openings and what makes Smart & Final great. Anyone who follows the @SmartFinal handle and tweets at least once with the #SFSnackChat tag, will be qualified and entered to win! How exciting is that?! So set your phone alarms so you are ready to party with myself and Smart & Final this Wednesday!

Now, get to your local Smart & Final to pick up the few ingredients you need to make these delicious Baked Cinnamon Vanilla Pears for your family and friends!

Pecan Pie Cookie Sandwiches

It’s finally below 100* here in Arizona, so that means it’s officially fall baking time! Woohoo! My daughter and I couldn’t be more excited for baking season to start. We have lots of fall favorites, but we wanted to create something new year. Check out these yummy Pecan Pie Cookie Sandwiches we came up with!

Pecan Pie Cookie Sandwiches8

They taste just as delicious as they look, y’all. We had lots of fun incorporating different fall flavors in this simple cookie recipe. We purchased all of the ingredients at our local Walmart.

Pecan Pie Cookie Sandwiches1

INGREDIENTS:

  • Pillsbury™ Moist Supreme® Cake Mix
  • Pillsbury™ Creamy Supreme® Cream Cheese Icing
  • 1/4-1/2 cup M&M’s® Pecan Pie 9.9oz
  • 1/8 cup Snapple® Apple
  • 1/3 cup Mott’s® Apple Sauce Original

I love using cake mix to make cookies. They are so fluffy and light, like cake. I also like substituting apple sauce for oil in baking cookies because it also gives the cookie a moist, fluffy appeal. Now, let’s get to baking, shall we?

Pecan Pie Cookie Sandwiches2

Preheat your oven to 375*. In a mixing bow, combine cake mix, 2 eggs, and 1/3 cup of apple sauce. Scoop balls of dough onto your baking sheet, spacing them out as needed. Lightly press M&M’s® Pecan Pie into the tops of the cookie dough balls. Place in the oven to bake for 8-10 minutes.

Pecan Pie Cookie Sandwiches3

Pull cookies from the oven after baking and allow time to cool on the cooling rack.

Pecan Pie Cookie Sandwiches7

While your cookies are cooling, mix 1/8 cup Snapple® Apple into the Pillsbury™ Creamy Supreme® Cream Cheese Icing and place in the fridge to keep cold.

Pecan Pie Cookie Sandwiches4

Since you have a few minutes of wait time, be sure to enter the MARS Harvest Sweepstakes! No purchase necessary to enter to win awesome prizes like a KitchenAid Mixer!
MARS Bake In The Fun Sweepstakes

Once your cookies are cool and your icing is chilled, carefully spread icing onto the bottoms of half of your cookies.

Pecan Pie Cookie Sandwiches5

Then place another cookie right on top to create a cookie sandwich! YUM!

Pecan Pie Cookie Sandwiches6

And there you have it… easy Pecan Pie Cookie Sandwiches that are soooooooo good.

Pecan Pie Cookie Sandwiches9

Some of the best fall flavors wrapped up in one dessert. I’d say that’s a baking win, wouldn’t you? Be sure to stop at your local Walmart for all of the ingredients.

What are some of your favorite things to bake with in the fall?

Cheesy Chicken Enchilada Casserole

This shop has been compensated by Collective Bias, Inc. and its advertiser. All opinions are mine alone. #NaturallyCheesy #CollectiveBias

Now that fall is approaching and the weather is starting to cool down, we are all about eating al fresca. Whether it’s tailgating or hosting a backyard party, you can be sure that my favorite part of a get together is the food! Am I right? I’ve got a quick and easy recipe for you that’s perfect for tailgating season. Check out this Cheesy Chicken Enchilada Casserole!

cheesy chicken enchilada casserole9

This casserole is seriously so so good y’all. It’s cheesy and full of flavor, plus it’s super easy to throw together. Your family and guests will be sure to compliment you in between cheesy bites.

cheesy chicken enchilada casserole1

Let’s get down to business and make some casserole, shall we? Head to your local Walmart and pick up the following ingredients:

  • Kraft Natural Shreds (16oz) Mexican Style
  • Kraft Natural Chunk (8oz) Chipotle
  • corn tortillas
  • 1 can red enchilada sauce
  • shredded chicken
  • salsa
  • salt, pepper
  • 3 stalks green onion diced
  • 1 avocado chopped

Preheat your oven to 375*, open the can of enchilada sauce, tear about 15-20 corn tortillas in 1/4s, and grab a casserole dish. To make this recipe super simple, I usually use leftover chicken or rotisserie chicken and shred it with a fork and toss it in salsa. Cube about 1/4-1/3 of the Kraft Natural Chunk (8oz) Chipotle cheese and set aside. In the casserole dish, pour a thin layer of enchilada sauce and layer the torn tortillas, chicken, and cubed cheese. I usually go 2 layers up, but your can go 3 if you have enough room in your dish.

cheesy chicken enchilada casserole2

To top the casserole, put another layer of torn tortillas and the rest of the enchilada sauce.

cheesy chicken enchilada casserole3

Now it’s time to cheese it up! Sprinkle 1-2 cups of Kraft Natural Shreds (16oz) Mexican Style cheese over the top. I love Kraft Natural Shreds because it saves me time… no shredding by hand necessary!

cheesy chicken enchilada casserole4

Next, sprinkle the diced green onion over the cheese and put in the over for 20 minutes.

cheesy chicken enchilada casserole5

After your casserole is baked and the cheese is all melty, pull it out of the oven and let cool for 5 minutes. Top with chopped avocado.

cheesy chicken enchilada casserole6

Look at that cheesy goodness. Now it’s ready to share with family and friends at your next tailgate party!

cheesy chicken enchilada casserole8

Don’t forget the chips!

cheesy chicken enchilada casserole7

You can find Kraft Natural Shreds (16oz) and Kraft Natural Chunk (8oz) are at your local Walmart in the cheese section. Plus, find the game time demo on 9/26 at Walmart also!

#ad Tiki Orange Cornish Hens

This shop has been compensated by Collective Bias, Inc. and its advertiser. All opinions are mine alone. #JuicyGrilledCornish #CollectiveBias

How was your holiday weekend, friends? Ours was busy but we were about to carve some time away to pull out the grill! I LOVE grilling… the smell is so nostalgic for me. Lots of backyard barbecues when I was growing up. This weekend we decided to grill up some Tiki Orange Cornish Hens and veggies. Y’all… it was delicious!! Probably one of my favorite recipes for the grill to date.

tiki orange cornish hens1

INGREDIENTS:

  • 2 Tyson® Cornish Hens
  • bell peppers (any colors you like)
  • onion
  • 1 orange (+ zest of orange)
  • 1 1/2 tbs Kikkoman® Soy Sauce
  • 1 cup orange juice (pulp free)
  • salt
  • 10 drops lime juice
  • 1 1/2 tbs water
  • 3 tbs sugar
  • 5 tbs white vinegar
  • 1/2 tsp garlic (minced)
  • 1 tsp ginger (minced)

tiki orange cornish hens2

After you purchase your ingredients from your local Walmart, defrost the Tyson® Cornish Hens, chop your veggies, and heat up your grill. Once they are defrosted, squeeze a slice of orange (1/6 of the orange) over each hen and stuff the hen with the orange slice. Massage salt and the juice into the hens and place them on the hot grill to add grill marks on both sides (about 1-2 min on each side). Take the hens off and wrap each in aluminum foil. Turn the heat down low on the grill and place the hens back on. Cover the grill and cook for about 30-40 minutes.

tiki orange cornish hens3

While hens are cooking on the grill, add your chopped veggies to skewers and set aside. In a bowl wisk together the juice of the orange, zest of the orange, cup of orange juice, water, vinegar, sugar, lime juice, garlic, ginger, and Kikkoman® Soy Sauce. Reduce to 1/4 on the stove top until it is the consistency of a glaze (as it cools it thickens).

tiki orange cornish hens7

Take the tiki orange glaze and skewers to the grill and uncover the hens. Place the skewers on the grill and brush the glaze all over the hens and the veggies. Leave veggies on the grill for about 5-10 minutes while your are basting the hens. Be sure to turn your veggies so that they grill up on all sides.

tiki orange cornish hens6

tiki orange cornish hens4

Remove everything from the grill and plate. This meal is great on a bed of fresh spinach, with a side of jasmine rice, or roasted red potatoes!

tiki orange cornish hens1

Find all the ingredients for this recipe at your local Walmart. You can find the Kikkoman® Soy Sauce in the Asian Foods aisle and the two pack of Tyson® Cornish Hens in the frozen poultry section.

So, I want to hear it! Do you love to grill? What are some of your favorite cornish hen recipes?

Frozen Banana Cheerios ™ Pops

This shop has been compensated by Collective Bias, Inc. and its advertiser. All opinions are mine alone. #GiveABox #CollectiveBias

Hello there Makers and Happy Monday! I’m excited to share a yummy, kid-friendly recipe that makes the perfect breakfast on those busy school mornings or a wholesome afternoon snack. Plus, it’s so easy that the kids can make it themselves. Check out these delicious Frozen Banana Cheerios ™ Pops!

Frozen Banana Cheerios Pops1

They are so good and kids will love them! When I was growing up, Cheerios ™ was a staple in my home. It was used as breakfast with a bowl of milk or as an afternoon snack, dry. The best part about this recipe is that it’s gluten free. That’s right… even the Cheerios! Cheerios products will maintain the same great taste that consumers love and with the exception of Multigrain, none of the other products needed to be reformulated. Cheerios are made with Whole Grain Oats as the first ingredient. Oats are inherently gluten free, but the supply of oats contain small amounts of wheat, rye and barley that are inadvertently introduced at the farm or during transportation which prevents the product from being labeled Gluten Free. General Mills developed a process to remove the wheat, rye and barley from our supply of whole oats in order to ensure that the oats in Cheerios are Gluten Free. To celebrate the new Gluten-Free line, Cheerios has launched the Buy-A-Box-Give-A-Box Coupon program. Each box of Cheerios will have a unique code where shoppers can enter that online and give an e-card and mailed coupon for a free box of Cheerios to a recipient of their choice! How fun is that? I sent a box to my friend of mine with Celiacs disease and it was so simple…I did it right from my phone!

Cheerios1

After grabbing a box of Cheerios from Walmart, enter the Give a Box code on the website HERE. Fill in the information including a friend or family member’s email address who you want to Give a Box to. Then you can type in a message and pick a cute E-card to accompany your gift. (I didn’t take a picture of the E-card I picked for my friend, because she reads my blog and I want it to be a surprise! But trust me when I say ADORBS.) Took me two minutes…it was that easy!

Cheerios2

Now that you’ve purchased your  Cheerios ™ and have gifted a box to a friend, it’s time to try out this yummy snack recipe with the kids.

INGREDIENTS:

  • Bananas
  • Nut butter
  • Cheerios ™
  • Cake pop or popsicle sticks

First, you want to cut your bananas in half and peal them. Insert the sticks into the bottoms of the bananas and wrap them in plastic wrap and stick them in the freezer for a few hours (or until frozen).

Frozen Banana Cheerios Pops2

Next, soften your nut butter (we used peanut butter) in the microwave. Be sure it’s not hot. Remove the bananas from the freezer and plastic wrap. Coat the outside of the bananas with the softened nut butter.

Frozen Banana Cheerios Pops3

Then roll or sprinkle the bananas with Cheerios ™. Put them on wax paper or a Silpat and stick back in the freezer for about an hour.

Frozen Banana Cheerios Pops4

Remove the Frozen Banana Cheerios ™ Pops from the freezer and enjoy! If you make them ahead of time, just wrap them back up in the plastic wrap and stick them in the freezer. Fun and easy for the kids to make and they are super fun to eat too.

Frozen Banana Cheerios Pops5

What are your favorite kind of Cheerios ™? Who would you gift a box to?

As you may have heard, some select boxes of Cheerios™ and Honey Nut Cheerios™ produced over two weeks in July at the Lodi, California plant, have been recalled due to a wheat allergen.  This recall only affects consumers with Celiac disease or a gluten-sensitivity. To learn more about the recall, and if your product is affected please go to: http://blog.generalmills.com/.

S’mores Chocolate Malt Custard Cookie Stack

This shop has been compensated by Collective Bias, Inc. and its advertiser. All opinions are mine alone. #IceCreamHero #CollectiveBias

On a super hot summer day, the only thing I want to eat is something cool and refreshing. And here in Arizona, it’s pretty dang hot right now. After making a homemade dinner, it’s nice to be able to quickly throw a yummy, refreshing dessert together for the family. This S’mores Chocolate Malt Custard Cookie Stack does just the trick.

  custard cookie stack1

Often times I don’t make dessert because I don’t have the time or energy for it. Can you relate? This cookie stack recipe is so delicious and so quick to make, it’s something even the busiest mom can do.

You will need:

  • graham crackers/cookies (I prefer the gluten free brand at Safeway)
  • marshmallows
  • butter
  • DREYER’S Frozen Custard Chocolate Malt (also purchased at Safeway)

In a small saucepan, melt about a tablespoon of butter and add in about 1/2 cup of marshmallows. Stir slowly letting the butter and marshmallows combine. Once the marshmallows are melted down, you can start building the cookie stack.

custard cookie stack2

Place a graham cracker on a plate, then a scoop of DREYER’S Frozen Custard Chocolate Malt on top, then add another graham cracker on top of the custard, and continue this pattern until you are 3 graham crackers and two scoops of DREYER’S Frozen Custard high.

custard cookie stack3

Slowly drizzly the melted marshmallows over the top of the cookie stack…

custard cookie stack4

Doesn’t that look delicious?! It’s SO yummy!!

Can you believe it only took me a few minutes to throw one of these beauties together? And the best part is that it’s easy for the kids to help make or even make their own.

custard cookie stack5

My entire family loved this dessert. DREYER’S Frozen Custard is ice cream’s creamier cousin… have you tried it yet? You can find it at your local Safeway along with the other ingredients for this recipe. Plus, you can save $1.00 off 1 DREYER’S Branded Product 32 –48 oz.
