Food-a-licious Friday: Gluten Free Bird Nest Snacks

Hello there and Happy Friday, friends!

I have been taking a bit of a break from blogging the last couple of weeks with my daughter’s birthday and our trip to Utah. I’m happy to be back in business and am excited to share a couple of the Easter and spring projects I have been working on! Today I am going to share the snack I made with my preschool chefs during our cooking class this week. This month our recipes are spring themed, so we made Gluten Free Bird Nest Snacks to celebrate spring!

The kiddos had so much fun making these snacks and they were such a tasty treat too! Are you ready to make some with your kids?

You will need:

  • gluten free Chex cereal
  • marshmallows
  • coconut oil
  • gluten free jelly beans (or another candy that’s egg shaped)

In a hot pot on the stove, melt 2 tablespoons of coconut oil and 2 cups of marshmallows, stirring them together often. Pour 3 cups of Chex into a mixing bowl. Once marshmallows and coconut oil are melted together, pour it over the cereal and carefully fold into eachother until all of the cereal is coated with marshmallow. Have the kids rub their hands with coconut oil and the inside of a cupcake tin to prevent the marshmallow from sticking to everything. Grab handfuls of Chex/marshmallow mix and place into the cupcake pan, pressing down in the center to make it look more like a next. Let the nests sit in the cupcake pan for about 5 minutes to set up. Remove the ‘nests’ and add candy eggs to them. EAT!

We also read a book about spring and colored a picture about spring. SO much fun celebrating spring with a fun snack!

Since eliminating gluten from my diet almost 9 months ago, I have really enjoyed creating new gluten free recipes for my family and myself. Tyson Gluten Free Grilled & Ready Chicken made dinner prep quick and simple. I threw a couple of pieces of chicken in the microwave (following the directions on the package) for a few minutes and BOOM! My chicken was ready to be beautified into an amazing Gluten Free Chicken Salad Sandwich.

A quick and simple gluten free recipe using Tyson Gluten Free Grilled & Ready Chicken from Sam's Club.

  1. Tyson Gluten Free Grilled & Ready Chicken (2 breasts)
  2. 1/2 cup plain Greek yogurt
  3. 1/3 cup craisins
  4. 1/3 cup sliced almonds
  5. 1/4 cup minced onion
  6. salt & pepper to taste
  7. gluten free bread
  8. spinach or lettuce (optional)
  1. Cook 2 Tyson Gluten Free Grilled & Ready Chicken breasts according to the directions on the package.
  2. Shred chicken and put in the freezer for a quick cool down.
  3. Once chicken has cooled, in a small mixing bowl add all ingredients and mix well.
  4. Toast your gluten free bread and top with spinach or lettuce and load up with the chicken salad mix.
  5. Enjoy!
  1. Substitute your favorite nuts if you aren't a fan of almonds and even top on avocado instead of using bread!

Food-a-licious Friday: South Western Chicken and Veggie Soup

Hello there and Happy Friday!!

It’s cold and rainy around these parts, which is SO rare for where I live in Arizona. It’s pretty much the perfect weather for something homemade and warm…and of course something that cooks quickly so that you can warm up that belly in no time at all. I’m sharing one of my go-to soups for days such as today. It’s very easy and very inexpensive and can be modified easily to your liking. I often switch out some veggies for others depending on what I have in the fridge. My recipe for South Western Chicken and Veggie Soup is sure to win your heart…and my 5 year old daughter loves it too (with crunched tortilla chips on top!).

It’s a one pot wonder, my friends! And cooks in about 20-30 minutes. Just throw all the ingredients into a pot on the stove, bring it to a boil then reduce to a simmer and cover. I stir it after about 10 minutes of cooking and then again when it’s finished. Very low-key meal.

  1. 1 can vegetable broth
  2. 1/2 cup water
  3. 1 can chicken (drained)
  4. 1 can corn
  5. 1 can black beans (rinsed)
  6. 1 can Rotel
  7. 1/3 cup favorite salsa
  8. 3/4 cup chopped carrots
  9. 1/2 cup chopped celery
  10. 1/2 cup chopped peppers
  11. 3 chopped green onions
  12. 1/4 tsp minced garlic
  13. salt, pepper, cumin to taste
  1. Throw all of the ingredients into a pot on the stove.
  2. Bring to a boil then reduce to a simmer and cover.
  3. Cook 20-30 minutes, stirring at the half way mark.
  4. *Optional: Serve with shredded cheese, tortilla strips and sliced avocado.

Food-a-licious Friday: Gluten Free Homemade Macaroni and Cheese

The other day I shared on Instagram and Facebook that I had made the most divine Gluten Free Homemade Macaroni and Cheese for the very first time.  I was super proud of myself, as we are a household of pasta lovers and macaroni and cheese is a go-to meal of mine. I’m sharing the recipe here for my gluten free friends. And if you aren’t gluten free, you can substitute whatever pasta shells you’d like.

Gluten Free Homemade Macaroni and Cheese
Serves 6
A delicious gluten free version of a family favorite!

  1. Box of gluten free macaroni
  2. 3/4 cup coconut or almond milk
  3. 1/4 cup butter or substitute (coconut oil)
  4. 1 1/2 cups finely shredded mild cheddar cheese
  5. 3/4 cup finely shredded mozzarella cheese
  6. 1/4 cup light cream cheese
  7. 2 heaping tablespoons of parmesan cheese
  8. 1/4 teaspoon fresh minced garlic
  9. sea salt & pepper to taste
  1. Cook pasta according to box instructions, rinse and leave in strainer.
  2. Simmer butter, milk, and garlic in the pot and reduce.
  3. Stir in the cheeses and cook until melted.
  4. Add in the pasta and remove from heat.
  5. Season with sea salt and pepper to taste.
  1. If you are not on a gluten free diet, feel free to substitute the pasta with whatever pasta you like.

Food-a-licious Friday: Gluten Free Chocolate Chip Cookies

Happy Friday!!

What better way to celebrate the weekend than with a big glass of almond milk and warm homemade cookies?! Just recently (a little more than 4 weeks ago) I decided to change my diet. There’s plenty of reasons why, but the main one being that I need to find ways to be a healthier ME. So I decided to get rid of the gluten in my diet as well as eating more whole foods rather than process foods. But let’s be honest…I oday I would like to share my first ever gluten free recipe with you… Gluten Free Chocolate Chip Cookies!

1 c brown sugar

1/2 c white sugar

1 c butter

2 eggs

1/2 tsp baking soda

1/2 tsp cocoa powder

2 1/2 cups gluten free flour (coconut or almond flour)

1/4 tsp salt

2 tsp vanilla extract

2 cups chocolate chips


In a large mixing bowl, combine sugars and butter.

Add vanilla, cocoa powder, and eggs to the mixing bowl and mix until combined. Don’t mix too long or your sugars will dissolve.

Add flour, salt, and baking soda to the mixture and combine well.

Fold in chocolate chips.

Cover with plastic wrap and allow your dough to chill in the fridge 20-30 minutes.

Scoop dough onto cookie sheet and bake at 300* for 15 minutes (give or take a few).

Remove from oven and place onto cooling rack.

I tell you what, I was nervous to bake gluten free goodies but after this experience I am so excited to get my gluten free bake on!
