Cheesy Chicken Enchilada Casserole

Now that fall is approaching and the weather is starting to cool down, we are all about eating al fresca. Whether it’s tailgating or hosting a backyard party, you can be sure that my favorite part of a get together is the food! Am I right? I’ve got a quick and easy recipe for you that’s perfect for tailgating season. Check out this Cheesy Chicken Enchilada Casserole!

This casserole is seriously so so good y’all. It’s cheesy and full of flavor, plus it’s super easy to throw together. Your family and guests will be sure to compliment you in between cheesy bites.

Let’s get down to business and make some casserole, shall we? Head to your local Walmart and pick up the following ingredients:

  • Kraft Natural Shreds (16oz) Mexican Style
  • Kraft Natural Chunk (8oz) Chipotle
  • corn tortillas
  • 1 can red enchilada sauce
  • shredded chicken
  • salsa
  • salt, pepper
  • 3 stalks green onion diced
  • 1 avocado chopped

Preheat your oven to 375*, open the can of enchilada sauce, tear about 15-20 corn tortillas in 1/4s, and grab a casserole dish. To make this recipe super simple, I usually use leftover chicken or rotisserie chicken and shred it with a fork and toss it in salsa. Cube about 1/4-1/3 of the Kraft Natural Chunk (8oz) Chipotle cheese and set aside. In the casserole dish, pour a thin layer of enchilada sauce and layer the torn tortillas, chicken, and cubed cheese. I usually go 2 layers up, but your can go 3 if you have enough room in your dish.

To top the casserole, put another layer of torn tortillas and the rest of the enchilada sauce.

Now it’s time to cheese it up! Sprinkle 1-2 cups of Kraft Natural Shreds (16oz) Mexican Style cheese over the top. I love Kraft Natural Shreds because it saves me time… no shredding by hand necessary!

Next, sprinkle the diced green onion over the cheese and put in the over for 20 minutes.

After your casserole is baked and the cheese is all melty, pull it out of the oven and let cool for 5 minutes. Top with chopped avocado.

Look at that cheesy goodness. Now it’s ready to share with family and friends at your next tailgate party!

How was your holiday weekend, friends? Ours was busy but we were about to carve some time away to pull out the grill! I LOVE grilling… the smell is so nostalgic for me. Lots of backyard barbecues when I was growing up. This weekend we decided to grill up some Tiki Orange Cornish Hens and veggies. Y’all… it was delicious!! Probably one of my favorite recipes for the grill to date.

INGREDIENTS:

  • 2 Tyson® Cornish Hens
  • bell peppers (any colors you like)
  • onion
  • 1 orange (+ zest of orange)
  • 1 1/2 tbs Kikkoman® Soy Sauce
  • 1 cup orange juice (pulp free)
  • salt
  • 10 drops lime juice
  • 1 1/2 tbs water
  • 3 tbs sugar
  • 5 tbs white vinegar
  • 1/2 tsp garlic (minced)
  • 1 tsp ginger (minced)

After you purchase your ingredients from your local Walmart, defrost the Tyson® Cornish Hens, chop your veggies, and heat up your grill. Once they are defrosted, squeeze a slice of orange (1/6 of the orange) over each hen and stuff the hen with the orange slice. Massage salt and the juice into the hens and place them on the hot grill to add grill marks on both sides (about 1-2 min on each side). Take the hens off and wrap each in aluminum foil. Turn the heat down low on the grill and place the hens back on. Cover the grill and cook for about 30-40 minutes.

While hens are cooking on the grill, add your chopped veggies to skewers and set aside. In a bowl wisk together the juice of the orange, zest of the orange, cup of orange juice, water, vinegar, sugar, lime juice, garlic, ginger, and Kikkoman® Soy Sauce. Reduce to 1/4 on the stove top until it is the consistency of a glaze (as it cools it thickens).

Take the tiki orange glaze and skewers to the grill and uncover the hens. Place the skewers on the grill and brush the glaze all over the hens and the veggies. Leave veggies on the grill for about 5-10 minutes while your are basting the hens. Be sure to turn your veggies so that they grill up on all sides.

Remove everything from the grill and plate. This meal is great on a bed of fresh spinach, with a side of jasmine rice, or roasted red potatoes!

They are so good and kids will love them! When I was growing up, Cheerios ™ was a staple in my home. It was used as breakfast with a bowl of milk or as an afternoon snack, dry. The best part about this recipe is that it’s gluten free. That’s right… even the Cheerios! Cheerios products will maintain the same great taste that consumers love and with the exception of Multigrain, none of the other products needed to be reformulated. Cheerios are made with Whole Grain Oats as the first ingredient. Oats are inherently gluten free, but the supply of oats contain small amounts of wheat, rye and barley that are inadvertently introduced at the farm or during transportation which prevents the product from being labeled Gluten Free. General Mills developed a process to remove the wheat, rye and barley from our supply of whole oats in order to ensure that the oats in Cheerios are Gluten Free. To celebrate the new Gluten-Free line, Cheerios has launched the Buy-A-Box-Give-A-Box Coupon program. Each box of Cheerios will have a unique code where shoppers can enter that online and give an e-card and mailed coupon for a free box of Cheerios to a recipient of their choice! How fun is that? I sent a box to my friend of mine with Celiacs disease and it was so simple…I did it right from my phone!

(I didn’t take a picture of the E-card I picked for my friend, because she reads my blog and I want it to be a surprise! But trust me when I say ADORBS.) Took me two minutes…it was that easy!

Now that you’ve purchased your  Cheerios ™ and have gifted a box to a friend, it’s time to try out this yummy snack recipe with the kids.

INGREDIENTS:

  • Bananas
  • Nut butter
  • Cheerios ™
  • Cake pop or popsicle sticks

First, you want to cut your bananas in half and peal them. Insert the sticks into the bottoms of the bananas and wrap them in plastic wrap and stick them in the freezer for a few hours (or until frozen).

Next, soften your nut butter (we used peanut butter) in the microwave. Be sure it’s not hot. Remove the bananas from the freezer and plastic wrap. Coat the outside of the bananas with the softened nut butter.

Then roll or sprinkle the bananas with Cheerios ™. Put them on wax paper or a Silpat and stick back in the freezer for about an hour.

Remove the Frozen Banana Cheerios ™ Pops from the freezer and enjoy! If you make them ahead of time, just wrap them back up in the plastic wrap and stick them in the freezer. Fun and easy for the kids to make and they are super fun to eat too.

Stuffed Apple Slices

Today I am going to share a really fun recipe you can make with your kids! It’s always great getting the kids involved in the prepping and even cooking of a meal. This recipe is a great healthy snack and an easy one for kids preschool age and up to make. Check out these Stuffed Apple Slices… it’s one of the many awesome recipes in the Children’s Culinary Institute curriculum.

INGREDIENTS

  • 2 large apples
  • 1 cup nut butter (peanut, almond, cashew, etc)
  • 1 tbsp raw honey (local is the best)
  • 2 tbsp mini carob chips

Using an apple coring tool, core the apples and dry out the centers with a paper towel. If you don’t feel comfortable with the little ones using the coring tool, you can take over that step and have the kids dry out the centers when you’re done.

Next mix all ingredients (except the apples) in a mixing bowl.

Using a spoon or a butter knife, fill the center of the apples with the nut butter mixture. Stuff them good!! Wrap them with plastic wrap and stick them in the fridge for an hour (I set the timer so I don’t forget). After an hour, remove the pastic wrap and slice apples in thin slices. Serve!

Look at that proud, satisfied smile! Having kids involved in the cooking process often encourages them to try new things and make healthier choices. And this snack is a great no-cook, no-bake recipe which is perfect for summer time when you don’t want to heat up the house and you want to give the kids something fun to do.

S’mores Chocolate Malt Custard Cookie Stack

On a super hot summer day, the only thing I want to eat is something cool and refreshing. And here in Arizona, it’s pretty dang hot right now. After making a homemade dinner, it’s nice to be able to quickly throw a yummy, refreshing dessert together for the family. This S’mores Chocolate Malt Custard Cookie Stack does just the trick.

Often times I don’t make dessert because I don’t have the time or energy for it. Can you relate? This cookie stack recipe is so delicious and so quick to make, it’s something even the busiest mom can do.

You will need:

  • graham crackers/cookies (I prefer the gluten free brand at Safeway)
  • marshmallows
  • butter
  • DREYER’S Frozen Custard Chocolate Malt (also purchased at Safeway)

In a small saucepan, melt about a tablespoon of butter and add in about 1/2 cup of marshmallows. Stir slowly letting the butter and marshmallows combine. Once the marshmallows are melted down, you can start building the cookie stack.

Place a graham cracker on a plate, then a scoop of DREYER’S Frozen Custard Chocolate Malt on top, then add another graham cracker on top of the custard, and continue this pattern until you are 3 graham crackers and two scoops of DREYER’S Frozen Custard high.

Slowly drizzly the melted marshmallows over the top of the cookie stack…

Hello friends! Today I am sharing an easy recipe that’s perfect to bring to summer potlucks, snack on by the pool at a BBQ, or have as an appetizer before dinner. Once you try it, you’ll want to share this Chinese Chicken Salad Recipe with your family and friends!

It’s light and refreshing, but full of flavor. Want to know the best part? It only takes a few ingredients and few minutes to make.

I purchased all of the ingredients for this delicious summer recipe at Smart & Final. All of the First Street products were perfect for this side dish. 

  • canned chicken (2)
  • Chinese Chicken salad dressing (1/4 cup)
  • almonds (1/4 cup, chopped)
  • crackers
  • carrot (1, shredded) 
  • green onion (1/8 cup, chopped) 
  • cream cheese (about 1/4 cup) 
  • pepper (to taste)
  • garlic powder (to taste)

In a warm pan on the stove, saute everything except the crackers, almonds and cream cheese. This only takes about 5-10 minutes on the stove top. Remove and let cool.

Smear cream cheese onto the crackers.

Scoop the Chinese Chicken Salad onto the cream cheese and crackers. Sprinkle chopped almonds on top and it’s ready to share at your next summer potluck!

You could also dump the Chinese Chicken Salad over a block of cream cheese, sprinkle the chopped almonds on top with a cheese knife and set the crackers to the side. This recipe is also yummy in lettuce cups too.

#Ad DIY Fantastic Four Shirts and Boneless Chicken Kabobs

Since we are all about superheroes in our house, you can imagine our excitement for the new Fantastic Four movie that’s coming to theaters next month! We can hardly wait! I decided to craft us up a few shirts using the Fantastic Four logo. To do this, I used my Silhouette Cameo and created a design. Before cutting it out on heat transfer vinyl, I mirrored the imaged.

Following the rest of the directions on the heat transfer vinyl, I let my Silhouette Cameo do all the hard work. After the images were cut into the vinyl, I removed it from the machine and weeded the images so that just the Fantastic Four logo was left. I placed them on the black shirts where I wanted them and ironed carefully.

Note: The directions say to place a cloth in between the iron and the plastic on the heat transfer vinyl, but my iron is old and doesn’t get too hot. If you are using heat transfer vinyl, please follow the directions on the package to avoid malfunctions.

Next, I pealed the plastic sheet off carefully, making sure the vinyl had adhered to the shirt. After I finished all 3, I was DONE! That easy my friends. Now we are ready to wear our shirts to see the new Fantastic Four movie when it hits theaters.

Don’t think I forgot about that kid-friendly recipe I promised you! Using Tyson Any’Tizers® Buffalo Boneless Wyngz and Honey BBQ Boneless Wyngz, it’s a quick and easy dinner the kids can help with before heading out to see the movie! Just pop the Tyson Any’Tizers chicken onto a baking sheet and bake according to the directions on the package. Avocado Cilantro Lime Dip

With Cinco de Mayo just around the corner, I’m preparing a simple fiesta dinner for my family of three. We are super busy right now, so I’m not able to get crazy with the homemade enchiladas, refried beans, and tortillas. Instead, I think I found just the thing. Today I am sharing a yummy recipe for Avocado Cilantro Lime Dip!

This dip is quick and easy to make! It’s fresh flavors are so yummy and it pairs great with Delimex Taquitos and Tacos, making it a really easy meal! #momwin

Here’s what you will need to make your own delicious dip for Cinco de Mayo…

  • 4 avocados
  • small handful of cilantro
  • lime
  • 1/2 teaspoon sea salt

First, slice around your avocados and remove the pits. Carefully use a knife to cut into the meat of the avocado, making a checkers pattern. Use a spoon to scoop to avocado away from the skin and into a bowl.

Using the backside of a fork, gently smash you avocado.

Next, finely chop your handful of cilantro and add it to the bowl.

Sprinkle 1/2 teaspoon of sea salt in the bowl. 

Quarter your lime and squeeze half of it into the bowl, making sure to avoid the seeds. Carefully fold ingredients together.

While you are making this dip, you can have your Delimex Taquitos and Tacos in the over baking. After they cool, dip them right into the Avocado Cilantro Lime Dip and enjoy! It’s so so good you guys!

Veggie Flats

Hello friends and Happy Friday to you! Today I am going to be sharing a healthy recipe that your kids will love to help you with. Plus it’s a great way to squeeze in those vegetables that are so important. This recipe for Veggie Flats can be used as a meal, side to a meal, or even a healthy snack! It’s one of the many awesome recipes found in the Children’s Culinary Institute curriculum.

INGREDIENTS:

1 med  head cauliflower

1 med head of broccoli 

4 large eggs

1/4 cup chopped fresh spinach 

2 tsp onion powder

2tsp. garlic powder 

salt and pepper, to taste

DIRECTIONS:

1. Preheat the oven to 375 degrees F. and line a baking sheet with parchment paper.

2. Trim the cauliflower,and broccoli  cut it into small, uniform pieces, and pulse in a food processor in batches until you get a couscous type consistency. The finely chopped veggies should make about 4 cups packed.

3. Place the fine veggies in a microwave-safe bowl  with the chopped spinach and microwave for 4-6 minutes. Place the mixture in a fine cheesecloth or thin dishtowel and squeeze out as much liquid as possible, being careful not to burn yourself. Dishwashing gloves or nylon pot holder mitts are suggested as it is very hot.

4. In a medium bowl, whisk the eggs. Add in veggie mix ,  salt and pepper. Mix until well combined. Use your hands to shape 4-6 small round flats on the parchment paper.

5. Bake for 10 minutes, carefully flip each flat, and return to the oven for an additional 5 to 7 minutes, or until completely set. Place tortillas on a wire rack to cool slightly.

6. Heat a medium-sized skillet on medium. Place a baked flats in the pan, pressing down slightly, and brown for 1 to 2 minutes on each side. Repeat with remaining flats.

We love to add cheese and fresh salsa to the tops of our Veggie Flats. But you could also add pizza sauce, mozzarella cheese, and toppings!
 
 
Look at that proud smile! I guarantee had I made this without her she would have never tried a bite. Having kids involved in the cooking process often encourages them to try new things that they otherwise wouldn’t have. 
 
As mentioned before, this recipe (and lots of others) can be found in the Children’s Culinary Institute curriculum. I have been a CCI instructor for 4 years now and I will be the first to tell you that I LOVE it. I am able to use the CCI curriculum and be apart of a team of instructors (nation wide!) who continue to support and help you grow. I can make my own hours and work right from home doing something I love, teaching kids of all ages how to make healthy choices and how to cook and bake. This is an important life skill that so many kids miss out on since it’s often not something offered in schools anymore. Cooking and baking incorporate math, reading comprehension, and science all while learning how to prepare healthy meals and snacks. We have themed months, cooking competitions, field trips, and the kids can even progress through the courses and move up in apron colors. They absolutely LOVE it. Their sense of accomplishment after starting with raw materials and then creating something that they can eat and enjoy… that’s priceless. Banana Bread

Hey everyone it is the Fitness Food Diva and I wanted to give you a great recipe for one of my favorite things, Banana Bread. By using sugar Splenda blend or other sugar substitutes (agave nectar or maple syrup), unsweetened applesauce, and avocado, it lowers the sugar and the calories, but is still delicious. I love to bake and making Banana Bread not only it simple and quick it makes your house smell edible. This recipe is perfect for all you Banana Bread lovers, plus you can throw walnuts, chocolate chips, pecans or just about anything else in with it to make it your own. I love to take a banana and slice it up and put it on top of the batter just before it goes into the oven to make it extra gooey.

Ingredients:

  • 7 ripe medium bananas, mashed
  • 1/2 cup unsweetened applesauce
  • 2-1/2 cups unbleached all purpose flour
  • 1-1/2 tsp baking soda
  • 1/2 tsp salt
  • 2 tbsp butter, softened
  • 2 tbsp of mashed avocado
  • 1/2 cup Splenda (or other sugar substitute)
  • 4 large egg whites
  • 1 tsp vanilla extract
  • 3 oz (3/4 cup) chopped walnuts

Directions: 

Preheat oven to 350°. Grease two 8×5 inch loaf pans with baking spray.

In a medium bowl, combine flour, baking soda and salt with a wire whisk. Set aside.

In a large bowl cream butter, avocado, and sugar with an electric mixer. Add egg whites, bananas, applesauce and vanilla, and beat at medium speed until thick. Scrape down sides of the bowl.

Add flour mixture and walnuts (or whatever you would like to add), then blend at low speed until combined. Do not over mix.

Pour batter into loaf pans and bake on the center rack for 50 minutes, or until a toothpick inserted in the center comes out clean.

Let the pan cool at least 20 minutes, bread should be room temperature before slicing.

It’s delicious! Makes for a great snack or breakfast. You can even wrap up your second loaf and freeze it or give it to a neighbor! Let us know if you try it!
